Valentine’s Day is a yearly holiday when lovers traditionally express their love for each other by giving flowers, heart shaped boxes filled with chocolates, and sending Valentine greeting cards. It’s also a great excuse to bake all sorts of luscious Valentine desserts – chocolate and otherwise.

Chocolate Tasting with Jacques Torres

beans and cocoa butter, sugar, vanilla and lecithin makes up dark chocolate. Milk chocolate is dark chocolate with a little bit milk of milk powder. For the chocolate tasting: Go to the market and buy about four types of gourmet chocolates. Figure on 1-2 ounces of each chocolate per person.
Start with the sweeter chocolate and work your way towards the more bitter, darker chocolate. Begin with the chocolate with the lowest cacao content first, and progress to the stronger, more bitter, stronger stronger chocolate.
